Roast Carrots with Fresh Tarragon
Carrots on the Side
Alright readers, I don’t know about you but I’ve a few extra L-B-S after all that holiday eating and I’ve got to get pack on the straight and narrow. That means dinners filled with lean protein and healthy side dishes. Tonight we tried out this version of roast carrots and it was fabulous!
Carrots and Tarragon
Here’s What You’ll Need
1 Bunch of Whole Carrots – stems trimmed, skin on but scrubbed clean
1 Bunch of Fresh Tarragon
Olive Oil
Salt & Pepper
Once carrots are trimmed and cleaned you can line them up on a cookie sheet. Preheat oven to 350 before continuing. Next clean and chop a handful of tarragon and sprinkle over carrots.
Next drizzle olive oil over carrots
Add Some Pepper
Now season with salt and pepper and place in the oven for about 20 minutes (be sure to turn carrots over one time so they’re cooked throughout).
Ready to Cook
Just Out the Oven
Serve them up on the side of THIS or even THAT and enjoy the satisfaction of knowing the holiday weight gain will soon be a thing of the past!
