Chicken Fried Rice
Chicken Fried Deliciousness
Ok, so this isn’t really exactly low calorie dinner. It IS loaded with veggies and protein and a great hearty meal for a cold winter night. I love it too because you can throw just about any veggie in and it’ll all taste delicious!
Here’s What You’ll Need
3 Boneless Skinless Chicken Breasts
1/2 Package of Bacon – you can use the whole thing if you’d like
1 Egg
1 Bell Pepper – any color is fine
1/2 a Box of Fresh Mushrooms – washed and sliced
1/2 Yellow Onion – Cut into large pieces
6 Green Onions – Diced
1 Bunch of Fresh Spinach – I prefer the bags by the pre-mixed salads because they’re pre-washed
1 Cup of Uncooked Rice – will be 3 Cups once cooked

First up, wash and cut all your veggies

Once you’ve washed and cut all of your veggies, put them into a bowl and set to the side. Next you can start cooking your rice. Put 1 Cup of rice into a pot with 2 Cups of water and bring to a boil. Once it boils, change heat to low and cover with a lid.

While the rice cooks you can start on your bacon. Cut the bacon into small strips

Next, place a large skillet on the stove at medium high heat… I use a wok for this (a great kitchen accessory if you don’t already own one) but if you don’t have a skillet works too.

You don’t need to put any oil in the pan since the bacon has so much grease. Just add it to the pan and cook until crispy.
Cutting Chicken
Next cut your chicken into cubes and add to the bacon. ** Disclaimer ** I am a crazy person when it comes to raw chicken so I’m going to take a moment to tell you that after I touch raw chicken I wash my hands obsessively with hot water and antibacterial soup. I also thoroughly wash the cutting board and the knife with hot water and then put them into the dishwasher for a cycle. Lastly I make sure and wipe down the counter with antibacterial spray. Maybe I’m crazy, but at least I’m safe.
Once the chicken is cooked through I add in my onions. When onions have just cooked through I crack one egg onto the stir fry. As you mix the egg into the stir fry it will break apart and cook.

Now it’s time to add the veggies…

Mix your veggies in with the proteins and cook just until heated through.

Now it’s time to add some spinach

At first you’re going to be like “Rachel, are you crazy?! This is way too much spinach!!” but as you mix you’ll see the spinach start to shrink down due to the heat and then you’ll be like, “oh, ok, you were right again Kitchen Goddess!”

Now it’s time for that rice you cooked. Simply add it to your stir fry and mix together.

And you’re all done!! Notice I never added any salt or other seasoning… the bacon has so much flavor it will season for you but if you need more you could always add some soy sauce. This is great with asparagus, water chestnuts, cashews, carrots, pineapple, broccoli… just about any veggie is great!
