
- The Goods
I don’t think I’ve mentioned yet that Dave has gone on a diet, but it’s true. Also, since he’s a boy he immediately lost 10 pounds but just deciding to cut out breads and such (it would take me 6 months of malnourishment to hit that goal, but whatever diet Gods). Anyhow, I’m so supportive of his endeavors and have tried to adjust my cooking accordingly. The tough part is, while he’s up for Mr. Universe 2012, all I (and this baby) want to eat is a plateful of carbs covered in gravy, topped with a pat of butter. As such I’ve been dying for mashed potatoes but I was bound and determined to make them a bit more healthy. I decided to try and mix in some cauliflower which I, shockingly, have never cooked with once in my life. The end results tasted exactly like mashed potatoes but due to the cauliflower they were packed with vitamin C. Also, since cauliflower has about 25 calories for a potatoes 200 we all felt better about ourselves. So if you’re in Dave’s boat and trying to drop some L-B-S consider this easy way to lighten up your favorite side dish!

Ready to Cook
Here’s What You’ll Need – makes enough for two adults and two toddlers so double if you need to =)
1/4 Head of Cauliflower – washed and cut into cubes
2 Whole Potatoes – washed and cut into cubes – I leave my skin on but you can remove if you prefer
1 Clove of Fresh Garlic – Peeled and finely chopped
Olive Oil
Salt and Pepper
Steaming Basket – I steamed the cauliflower to retain as many vitamins as possible, these are available at your grocery store for about $5 and are a great asset. I use mine all the time.

- The Steam Room
First bring a pot of water to boil and add potatoes. While they cook place steaming basket in the bottom of a pot and fill water up to the bottom of the basket. Add your cauliflower, cover with a lid and place on medium high heat. Cook both vegetables until tender.

- Ready to Mash
Once veggies are tender remove both from the water and place into a bowl together. I actually left a little of the potato water in the bowl since I’m not using milk like usual the water will help create a smoother consistancy.

- Mix and Mash
Add about a TBL of olive oil, garlic, and salt and pepper to taste. Use an electric mixer or potato masher and get to work.

- Adding Some Seasoning
Be sure to taste test… if it needs more salt or pepper now is the time to add it.

Bet You Can't Tell The Difference
The end result tastes EXACTLY like mashed potatoes, I swear! Give it a try and let me know what you think.

I have been dying for mashed potatoes but I only have a few potaoes. I always have cauliflower so this will be on tomorrows menu.
