Toasted Coconut Crispy Treats
Snap, Crackle, Pop
Sometimes the inspiration MCL recipes is based on something I’ve seen and want to recreate… sometimes I’m sharing a special meal from my childhood… and sometimes marshmallows are 3 for 1 at Vons and I need to find a way to get rid of my impulsive purchase. Guess which kind today’s post is.
Turns out, this time of year marshmallows come in all kinds of fun flavors there’s peppermint, gingerbread, pumpkin spice, and in my case toasted coconut and caramel. I couldn’t resist buying several bags (again, I’m a sucker for a bargain) and then I had use them for something. In this case, I went with rice crispy treats, which I know isn’t really reinventing the wheel but using a cool marshmallow flavor is an easy way to perk up an old standard.
Into the Pan
What You’ll Need
6 Cups of Rice Crispy Treats
1 Bag of Marshmallows – choose your own adventure on this one
3 Tbls of Butter
Start by melting the butter in a large saucepan on medium heat. Add marshmallows and stir until completely melted. Add rice crispy treats and combine (this takes a little elbow grease). Now you’ll add to a pan to cool. If you want treats that have straight sides you’ll have to chose a perfectly square pan. Make sure you generously grease your pan with butter so the treats will come out easily.
Sticky Situation
Once you add your mix to the pan butter your fingertips and use them to push the treats into the mold.
PS – you’re buttering them so they wont stick to the mix and make a big mess.
PPS – if you want to lick your fingers after this work, I wont judge you
Out on Display
Once your treats have cooled completely you can flip them upside down onto a flat surface to cut. If you’ve used enough butter on your pan this will be easy. If you haven’t used enough butter, you might start cussing right about now. Don’t worry, just cut out individual squares from the pan and use a small knife to wedge them out.

As you cut, be sure to keep all your treats about the same size… it just looks better!
These treats are a great addition to a holiday party or you could wrap them up as gifts like THESE for your favorite mailman, teacher, shrimp boat captain… you know, any of the important people in your life.
